Hearty Saskatoon Muffins

Ingredients

  • 1 cup Solstice Berry Farm Saskatoons (fresh or frozen)
  • 1 cup rolled oats
  • 1 cup buttermilk (** see substitutions)
  • 1 cup flour
  • 1/2 tsp salt
  • 3/4 cup brown sugar, firmly packed
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 large egg, beaten
  • 1/4 cup margarine or butter, melted
  • cooking spray
Optional topping:
  • Sprinkle brown sugar on top before baking, or
  • Mix cinnamon with white sugar and sprinkle on top before baking

    • Directions

      Preheat oven to 400 °F (190 °C).

    • 1.

      Spray muffin tins with cooking spray, or use paper baking cups.

    • 2.

      Combine oats and buttermilk in a small bowl and set aside.

    • 3.

      Combine the remaining dry ingredients in another larger bowl.

    • 4.

      Add the beaten egg & melted butter to the oat mixture.

    • 5.

      Mix well and add the oat mixture to the dry ingre-dients all at once.

    • 6.

      Stir ingredients until just moistened.

    • 7.

      Fold in the saskatoons gently.

    • 8.

      Fill the muffin cups 3/4 full.

    • 9.

      Bake for 15-22 minutes.

    • Cook's Note:

      ** Make buttermilk (1 cup milk with 1½ tsp lemon juice), or use 1 cup sour cream or 1 cup low fat yogurt.

      OMG, I just made these muffins, Marsha. They are amazing. Sprinkled a little brown sugar on top before I put them in the oven. Double yum. Your Saskatoons are so sweet. Brought up more than 1 cup from the freezer and can’t stop eating them. Looking forward to trying more of your recipes. Thanks for posting them!!!

        We’re sorry that that the muffin recipe didn’t work out well for you.
