Ingredients
- 1 cup Solstice Berry Farm Saskatoons (fresh or frozen)
- 1 cup rolled oats
- 1 cup buttermilk (** see substitutions)
- 1 cup flour
- 1/2 tsp salt
- 3/4 cup brown sugar, firmly packed
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 large egg, beaten
- 1/4 cup margarine or butter, melted
- cooking spray
Directions
- Preheat oven to 400 °F (190 °C).

Spray muffin tins with cooking spray, or use paper baking cups.

Combine oats and buttermilk in a small bowl and set aside.

Combine the remaining dry ingredients in another larger bowl.

Add the beaten egg & melted butter to the oat mixture.

Mix well and add the oat mixture to the dry ingre-dients all at once.

Stir ingredients until just moistened.

7.
Fold in the saskatoons gently.

Fill the muffin cups 3/4 full.

Bake for 15-22 minutes.

Cook's Note:
** Make buttermilk (1 cup milk with 1½ tsp lemon juice), or use 1 cup sour cream or 1 cup low fat yogurt.

OMG, I just made these muffins, Marsha. They are amazing. Sprinkled a little brown sugar on top before I put them in the oven. Double yum. Your Saskatoons are so sweet. Brought up more than 1 cup from the freezer and can’t stop eating them. Looking forward to trying more of your recipes. Thanks for posting them!!!
