Ingredients
- 4 cups Solstice Berry Farm Saskatoons (fresh or frozen)
- 1/4 cup water
- 2 tbsp lemon juice
- 3/4 cup white sugar
- 2 tbsp flour
- 1 tbsp butter
- 1 tsp almond extract (optional)
- Pastry for 9” two crust pie
Directions
- Preheat oven to 450°F (232°C).

Place the saskatoons in a pot, add water, bring to a boil, turn off heat and steam for 5 minutes. Steaming helps to soften the skin of the fruit.

Add lemon juice, sugar and flour and stir well.

Line deep pie plate with 1/2 of the pastry and pour the filling in.

Dot the filling with the butter and cover the pie plate with other 1/2 of pastry. Using a sharp knife, make holes in the top of the pastry to release steam.

Place on cookie sheet (to catch any drips and to brown bottom of pastry) and put into 450°F oven for 10 minutes.

Reduce oven temperature to 350°F and continue to bake another 20-30 minutes depending on your oven.

Cook's Note:
This 9” pie is best prepared in a deep dish pie plate. The filling is quite bubbly so if you wish to use a regular 9” foil pie plate we suggest you cut back this recipe to 3 cups of saskatoons and adjust the other ingredients accordingly.
