Ingredients
- 1/4 cup melted butter
- 2/3 cup brown sugar
- 2 1/2 cups Solstice Berry Farm Saskatoons (fresh or frozen)
- 1 tablespoon lemon juice
- 1/2 cup butter
- 3/4 cup white sugar (or other granulated)
- 1 egg
- 1 tsp vanilla
- 1 1/3 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup milk
- cooking spray (optional)
Directions

- Preheat your oven to 350 °F (190 °C).

In an 8″ square cake pan (non-stick or use non-stick spray), combine melted butter and brown sugar and spread evenly on the bottom.

Spread saskatoons evenly over butter/sugar mixture.

Sprinkle lemon juice over the berries.

Cream butter and gradually add sugar, mix until light and creamy.

Beat in egg and vanilla.

Mix dry ingredients together in a separate bowl: flour, baking powder, cinnamon, salt.

Add dry ingredient mixture to butter/sugar mix alternately with milk

Spread batter evenly over the saskatoon layer.

Bake in oven for 45-50 minutes or until a toothpick inserted into the centre comes out clean.

Let cool 10 minutes in the pan and then turn it out onto a large flat plate.

Serve with vanilla ice cream or whipped cream.

You can use a 9" square pan as well, but you may have to adjust the baking time accordingly.
